Kale and Stewed Tomatoes

This is a really easy recipe to follow.

1 bunch of green kale

4 garlic cloves (finely sliced)

1 Tbsp of red onion (finely sliced)

Red pepper flakes

3/4 cup of quartered cherry tomatoes

Olive oil

2 sprigs oregano

1 sprig rosemary

Slice the spines off of the kale and cut into small pieces. At this time you should put olive oil in a large saucepan and add 2 of the garlic cloves and the onion. Wait for the onions to turn translucent and then add the kale. One bunch at a time. Once it is all added to the pan, cover it and let it sit for a good 20 minutes.

Add olive oil and garlic to a small sauce pan and let it cook for a minute or two. Add the sliced tomatoes and let them stew. Add the rosemary and oregano. You can used dried herbs but I have fresh herbs in my garden. Let the tomatoes stew on low until the kale is done.

Once the kale is done, add red pepper flakes to taste and then put the tomatoes on top and ENJOY.
